Grown in altitudes of 900-1,100 meters in northern Chiapas, it boasts large beans and yields a rich, balanced cup with a smooth body. Hand-harvested by smallholders— most of whom are descendants of Indigenous tribes— this coffee is the product of decades of political and ethnic strife.
Harvested from November to March, it is received in parchment, quality-checked, and delivered to a Veracruz dry mill for further inspection and cleaning. Quality-controlled for imperfections, it is the perfect accompaniment to any morning.
Using water from the highest mountain in Mexico, this coffee has been processed naturally, leaving a coffee that is 99.9% caffeine-free.
